Pancakes are a weekend tradition in our house but last weekend I really wanted to use our waffle maker to make healthy waffles! I also wanted to make something that would use the delicious Farmer’s Market Fruit we had that was probably going to go bad faster than we can eat it. I have an issue in the summer where I buy all the fruit all at once because I love it all and I know it won’t be around forever. It doesn’t help that I am craving fruit all the time and baby seems to like it too!
Currently, our kitchen has the following fruit: plums, watermelon, cherries, strawberries and of course the year round staples- apple and banana. AND today is the weekly farmers market at work so I will likely buy more peaches. Is there anything better than a summer peach? This recipe can be customized easily to make your favorite topping.
- 4 eggs, separated
- 2 tbsp melted coconut oil
- 1 tsp vanilla
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/4 tsp cinnamon
- 1/3 cup almond milk
- 1/4 cup coconut flour
- 1/2 tbsp honey
- 1/4 cup brown sugar
- 1/2 cup water
- 2 tbsp butter
- 3 peaches chopped or sliced
Beat egg whites in a blender until peaks are formed
In a separate bowl, combine coconut flour, baking soda, salt and cinnamon
In a medium bowl mix coconut oil, vanilla, almond milk, egg yolks and honey
Mix flour mixture with egg yolk mixture
Slowly fold egg whites in to the mix
Grease the waffle maker and pour waffle mixture in to the maker
In a small sauce pan, melt the butter
Add the peaches and brown sugar and cook for 2-3 minutes until peaches are soft
Add water and reduce to simmer
Cook until desired consistency, stirring frequently to avoid burning
Pour on top of waffles and enjoy!
