Last weekend hubs and I celebrated our anniversary/babymoon at Rancho Bernardo Inn in San Diego. It was literally perfect right down to the lavender infused coconut lemonade. We spent the days at the pool and just relaxed at the resort. We are not usually sit by the pool people but something about knowing that the next several years are going to be spent with little sleep and answering to a baby’s every need made me want to soak in all the relaxation.
I also wanted to enjoy an adult beverage… but I did not. Instead I drank delicious mocktails and got the idea for my lavender infused simple syrup. This can be used in mocktails, cocktails, coffee or baking for an extra flavor boost.
Lavender Simple Syrup
This lavender simple syrup is easy to make and is delicious in coffee, cocktails and mocktails!
- 1 cup sugar
- 1 cup water
- 2 tbsp fresh lavender
Put water and lavender in a small saucepan and bring to boil
Turn heat to medium- low
Slowly add the sugar and stir until dissolved
Let simmer for 3-5 minutes
Take simple syrup off heat and pour in to a closed container to steep for 4-6 hours
Strain lavender and store simple syrup in the fridge
On our way out of San Diego we stopped at a little coffee shop called The King’s Craft Coffee Company They had a DELICIOUS lavender latte that I had to learn to recreate at home.
I had a hot latte there but this week I recreated an iced lavender cold brew and loved every minute of it. Now that I know how easy it is to make simple syrup, I want to make more! What delicious and seasonal simple syrup recipes do you recommend?
