Fruit Crostatas

Easy and delicious dessert comes together quickly and is the perfect way to use Farmer's Market berries or fruit. You can customize it to use any fruit you have on hand.

Servings 4 small crostatas



  • 1 cup white sugar
  • 4 tbsp white sugar
  • 2 cups flour
  • 1/4 tsp salt
  • 1 cup butter, cubed unsalted
  • 5 tbsp water


  • 1 cup fruit I tried it with blackberries, peaches, strawberries, apples and plums


  1. Use food processor to combine half cup sugar, flour and salt

  2. Add butter cubes and pulse until crumbly

  3. Add the water one Tablespoon at a time while pulsing to form the dough

  4. Remove dough from the food processor and roll in to a ball. Flatten in to a pancake, wrap in plastic wrap and stick in the fridge for an hour. (You can also put it in the freezer for a quick 20 minutes)

  5. While the dough is in the fridge, cut up the fruit you are going to use and put in a bowl with 1 tbsp sugar. Cover and set aside. 

  6. Preheat the oven to 450 degrees

  7. Take the dough out of the fridge and divide in 4 equal parts. On a floured surface, flatten to form a 6 inch pancake

  8. Place the dough on parchment paper lined cookie sheet and spoon the filling in to the middle leaving about 1 inch of dough.

  9. Sprinkle some sugar on top of the fruit and fold the dough in and pinch the edges

  10. Bake crostatas in the oven for 14-16 minutes until the edges and bottom are light brown. Let them cool and serve warm with or without (with) ice cream
