Ingredients

  • 4 eggs, separated
  • 2 tbsp melted coconut oil
  • 1 tsp vanilla
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/4 tsp cinnamon
  • 1/3 cup almond milk
  • 1/4 cup coconut flour
  • 1/2 tbsp honey

Peach Syrup

  • 1/4 cup brown sugar
  • 1/2 cup water
  • 2 tbsp butter
  • 3 peaches chopped or sliced

Instructions

Waffles

  1. Beat egg whites in a blender until peaks are formed

  2. In a separate bowl, combine coconut flour, baking soda, salt and cinnamon

  3. In a medium bowl mix coconut oil, vanilla, almond milk, egg yolks and honey

  4. Mix flour mixture with egg yolk mixture

  5. Slowly fold egg whites in to the mix

  6. Grease the waffle maker and pour waffle mixture in to the maker

Syrup

  1. In a small sauce pan, melt the butter

  2. Add the peaches and brown sugar and cook for 2-3 minutes until peaches are soft

  3. Add water and reduce to simmer

  4. Cook until desired consistency, stirring frequently to avoid burning

  5. Pour on top of waffles and enjoy!
